This pancake also takes to having things like chocolate chips or bananas mixed into the batter. Ingredients

    Whole Milk / Vitamin D, .75 cup
    *white vinager, 2 tbsp
    *Wheat flour, white, all-purpose, unenriched, 1 cup
    Granulated Sugar, 6 tsp
    Baking Powder, 2 tsp
    Baking Soda, .5 tsp
    Salt, .5 tsp
    Egg, fresh, whole, raw, 1 large
    Butter, salted, 2 tbsp

Tips

Be sure to melt the butter before mixing it with the eggs.
This recipe lends itself well to mixing in chocolate or fruits into the batter before cooking.


Directions

Be sure to melt the butter.
1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour"
2. Combine, flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumbs are gone.
3. Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

Serving Size: 4 4 inch diameter or 2 6 inch diameter pancakes
