Introduction

Delicious filling for a lettuce wrap, makes a perfect casserole with chopped up/cooked head of cauliflower or just have it with cauliflower "rice." Delicious filling for a lettuce wrap, makes a perfect casserole with chopped up/cooked head of cauliflower or just have it with cauliflower "rice."
Number of Servings: 4

Ingredients

    -2 tbsp oil or grease
    -Two boneless chicken breasts, 1/2 inch cubes
    -salt/pepper/chili powder/seasonings
    -7 spears or so of asparagus, inch long pieces
    -Handful of spinach, chopped up
    -7 tbsp. buttermilk ranch dressing
    -1 generous tbsp. "Beaver" brand sweet hot mustard
    -1/2 cup shredded cheddar cheese

Directions

In a med-large skillet, heat up the oil or grease on medium heat. Add the chicken and seasonings and cook about 7-10 minutes, or until the chicken is pretty much done.

Put the heat to low. Add the asparagus, spinach, ranch and mustard. Stir well and cook covered for 10 minutes.

After, stir in the cheese.

Serving Size: 4 lettuce wraps or sides to "rice," or 6 servings in a casserole with a chopped up cooked head of cauliflower added.
