1 cup Yellow Cornmeal
1/2 cup Whole Wheat Flour
1 tsp Baking Powder
1 cup Almond Breeze Almond Milk, Unsweetened Original
1 tsp Cider Vinegar
1/2 tsp Salt
2 tbsp Honey
1/4 cup Applesauce, unsweetened
Spray a small cake pan or muffin tin with oil spray.
In a medium bowl wisk together the almond milk, and vinegar, let sit and curdle. Add applesauce and honey, whisk until fully combined, thick and somewhat frothy.
In a large bowl, sift together the dry ingredients. Make a well in the center of the dry ingredients and add the wet, combining with a wooden spoon or stiff spatula. Stir until just mixed.
Bake 25-30 minutes until it passes the toothpick test.
