Introduction

Basically a pot luck soup, just about any frozen veggies will do fine. Basically a pot luck soup, just about any frozen veggies will do fine.
Number of Servings: 12

Ingredients

    1 lb chicken breast , cooked and diced
    1/2 cup chopped onion
    2 TBL chopped garlic
    1/4 cup red pepper
    1/2 sweet green pepper
    2-3 cups chopped celery
    1/2 bag frozen sliced carrots
    1/2 frozen chopped spinach
    1 cup pasta or cooked rice
    1 can red kidney beans, drained and rinsed
    1-17 oz low sodium chicken broth
    6-8 cups of water
    oil
    seasoning: parsley, basil, oregano, course black pepper, and salt -- to taste
    ** sage and thyme optional




Tips

I don't always use the green peppers, I will add corn sometimes and okra is a good idea.


Directions

In a large 6-8 qt pot cook brown chicken breast, don't cook all the way. sent take this out and set aside. Then saute the onions, garlic and oregano. when this is cooked thoroughly add chicken, and remaining ingredients. bring to a boil and then simmer for 45 minutes.
