2 medium baking potatoes
4 slices turkey bacon
1 tablespoon extra virgin olive oil
2 cups chopped fresh broccoli
1/2 cup chopped onion
10 squirts I Can't Believe It's Not Butter spray
2 slices Rosenborg Extra Creamy Blue Cheese slices
While potatoes are baking, prepare bacon according to package directions. Heat olive oil is a skillet over medium-high heat. Saute onions until they start to become transparent. Add broccoli and continue cooking until broccoli is crisp-tender; set aside. Chop or crumble bacon and stir it into the vegetables.
Remove foil from potatoes and place each one on a dinner plate. Cut potatoes down the center and cut cross-hatches into the flesh of the potato. Squirt each potato with 5 sprays of ICBINB spray. Top each potato with half of the vegetable mix. Crumble one slice of blue cheese on top of each potato.
