Ingredients

    Modified.
    1.25 lbs tomatoes diced
    small handful of sun dried tomatoes
    1/2 cup fresh basil
    2 tsp olive oil
    1 tbsp. lemon juice. I didn't have any so I didn't use it.
    1 tbsp. maple syrup. Recipe calls for 1 date.
    1 sm. garlic clove
    1 tsp. fresh thyme.
    1 t. flat leaf parsley
    salt and pepper. I used 1 tablespoon of nama shoyu.

    Serve over 4 medium ribboned zucchini. Not calculated in recipe.

Tips

Make ribbons out of the zucchini or shred it like noodles.
