Mediterranean All Whites Egg Scramble (GFCF*)

Introduction

This nutrient dense breakfast/brunch is very tasty and filling. *Using goat's milk/cheese instead of cow's milk allows this to be A-Okay for my son that has an intolerance to Casein. Ingredients

    Organic Coconut Oil Spray
    1c chopped Red Onion
    1 Garlic Clove
    3c of Chopped Kale
    4 - TJ Sun-dried Tomato Chicken Sausages Links
    1 can of Vigo Quartered Artichoke Hearts in water.
    16 oz carton of All Whites
    .5 cup TJ's Organic Marinara Basil Sauce
    2 oz. Chevre Soft goat cheese
    5 - Large Black or Kalamata Olives

*I Use Organic Ingredients whenever possible

Directions

Coat Large Skillet with Coconut Oil Spray
Chop and Sautee the Red Onion & Garlic Clove
Add 3c of Chopped Kale & Cover until tender
4 TJ Sun-dried Tomato Chicken Sausages quartered and diced, add to Pan after Kale has softened.
Drain & Rinse 1 can of Vigo Quartered Artichoke Hearts, using fingers, rip apart hearts and toss in pan for a minute or until warm.
Evenly pour a 16 oz carton of All Whites over all contents in the pan & cover, occasionally stir and flip.
Once the eggs appear to have cooked evenly, pour .5 cup of the TJ's Marinara Basil Sauce over the egg scramble and crumble the goat cheese, crumble the olives and spread over scramble, cover just for a moment until cheese softens.

Serving Size: 1/8 of a Large Skillet
