Delicious Vegetarian Taco Filling

Introduction

Ingredients

    *Beans, Canned Black Beans, 1 Can
    *Brown Rice success 20 min brown rice, 1 bag
    *Bird's Eye Frozen Corn, 2 cup
    *Tomatoes, canned, with green chilies, 1 - 10.5 oz. can
    *Oil-Great Value Canola Oil 2 Tbsp.
    *Onions, raw, 1 medium (2-1/2" dia), chopped
    *Chili powder, 3 tbsp
    *Pepper, red or cayenne, 1 tsp
    *Oregano, ground, 1 tbsp
    *McCormick ground cumin, 1 tbsp
    *Garlic Salt, 0.25 tsp
    *Cilantro, dried, .5 tbsp

Directions

Heat oil in a large nonstick skillet over medium heat. Add onion and corn; cook, stirring, until the onion begins to brown, about 5 minutes. Add rice, beans, tomatoes, and seasoning to pan and cook on medium 5-10 more minutes until all ingredients are incorporated. Serve on a bed of lettuce for a taco salad or tortillas for tacos (not part of calorie calculation).

Serving Size: makes approximately 6 servings.
