Introduction

Just my favorite veggies with some rice and soy sauce. This feeds my kids and I, with chips and salsa on the side. Just my favorite veggies with some rice and soy sauce. This feeds my kids and I, with chips and salsa on the side.
Number of Servings: 4

Ingredients

    1 c rice
    1 c peas
    1 c pinto beans
    1 c chopped mushrooms
    1 c chopped tomato
    3 eggs
    2 Tblsp EVOO
    2 Tblsp Soy Sauce

Tips

You can add broccoli, red pepper, anything. Have fun creating your own.

Directions

Start with cold leftover rice, best cooked the day before. In a heavy pan saute the rice and pfrozen peas in the EVoo until they are hot. Add in the mushrooms and tomatoes, cooking until desired tenderness. Splash in the soy sauce and mix just to warm the sauce. Serve! Enjoy!
