Mom's Chicken-n-Rice Soup

Introduction

Lofat and great on a cold day! Lofat and great on a cold day!
Number of Servings: 6

Ingredients

    2 can chicken broth
    2 boneless skinless chicken breast
    2 cups broccoli(chopped)
    2 carrots(chopped)
    1/2 cup bell pepper(diced)
    1/2 cup onion(chopped)
    2 stalks celery(chopped)
    1 1/2 cup cooked brown rice
    Mrs. Dash to taste
    1 can cream chicken soup

Directions

Cook rice seperately. Chop veggies. Add all ingredients in a large pot and let simmer for 1 1/2 hours. (Could also be cooked in a slow cooker.)

  • Made this soup today for work tomorrow. Really simple and easy, but taste great. I doubled the chicken and carrots to make it extra hearty. Will definitely be making this again!!

  • I'm not a cook, so I'm not sure what SIZE can of broth to use. Our grocery store sells more of the HUGE cans than the normal-sized ones. Anybody???? - 6/29/08

  • This was terrific. I didn't have any brown rice, so i used a box of long grain and wild rice, with the seasonings. I think this gave the soup even more flavor. - 3/20/08
