Chocolate Ch-Ch-Ch-Chia Banana Pudding

Vanessa has created a recipe for Banana Chai Seed Pudding that is great, but since I am a chocolate freak, I needed more... Hence, the Chocolate Ch-Ch-Ch-Chia Banana Pudding. A little more to it to thicken it up, but worth the extra effort for this very nutritious and amazingly tasty number. Ingredients

    2 c Almond Milk (Silk True Almond Unsweetened if you cannot make your own)
    2 Large Bananas Mashed up
    1 Large Scoop LTF Veganmax Protein Powder
    1 T Dark Cocoa Powder
    3 Squares Lindt Excellence 90% Cocoa Supreme Dark Chocolate
    1/2 t Xanthan Gum
    Liquid NuNaturals Vanilla Stevia Drops to taste
    6 T Chia Seeds

Directions

Pour VERY cold Almond Milk into blender, add the mashed up bananas, a large scoop of Veganmax Protein Powder, 1 T Dark Cocoa Powder, 1/2 t Xanthan Gum (to help thicken), one dropper of liquid vanilla stevia and blend for a minute. Taste to ensure correct sweetness and add more stevia as needed. Chop 2 of the 3 squares of dark chocolate and add to the blender and blend another 30-60 seconds. Pour into six, 1-c glass pyrex container and sprinkle 1 Tablespoon of Chia Seeds. Cover the glass bowls and shake it up. Refrigerate for 15-20 minutes and shake each one again. Refrigerate another 45 minutes or more before serving. Take the last dark chocolate square and grate over top of each pudding cup... mmmmm
