Cucumber and Bell Pepper Salad

Introduction

This a quick salad I made up because I love sweet bell peppers and feta cheese. You can add cooked shrimp or chicken to make it heartier or take out the cheese to make it vegan. This a quick salad I made up because I love sweet bell peppers and feta cheese. You can add cooked shrimp or chicken to make it heartier or take out the cheese to make it vegan.

Ingredients

    Cucumber, Red Bell Pepper, Yellow Bell Pepper, Feta Cheese, Extra Virgin Olive Oil, Italian Seasoning.

Directions

Dice the Cucumber, Red and Yellow Bell Peppers (you can also use orange) and place then in a bowl. Add in the feta cheese (shredded parmesean works too), the olive oil and the italian seasoning (1-2 tablespoons). (You can use about a 1/4 cup of italian salad dressing in lieu of the olive oil and italian seasoning). Toss together. Makes 3-4 half-cup servings.
