Kale Kasserole

Introduction

A delicious casserole. a complete meal in itself. I like it with orange slices or a simple fruit salad. If you have calories to spare, sprinkle some chopped cashews on top .

Number of Servings: 4

Ingredients

    350 g kale, whirled in food processor
    1 cup purple onion
    1/2 c. raw cashews
    1 14 oz pkg. silken firm tofu (400 g.)
    9 cloves garlic
    1/2 c. almond milk
    3 T lemon juice
    1 serving organic unhulled sesame seeds 1.4 ounces
    1 t. miso paste, white or brown
    6 T. nutritional yeast flakes
    4 t. rice vinegar
    1 t onion powder
    4 t. dijon mustard (rounded tablespoon)

Tips

It would be nice to add tri-color peppers to the kale.


Directions

Pulse all the kale until micro salad size. Place in greased casserole or 9 X 13 pan.
Process onion and add to Kale.

Put the rest of the ingredients in the processor and blend until mixed. Pour over the kale and onions. Mix.

Cover with foil. Bake at 350 for one hour.

Serving Size: Makes 4 large servings
