Curried Lentil Yam soup

Ingredients

    1 tbsp coconut oil
    1 cup lentils
    2 yams, cubed
    1 chopped onion
    2 tsp curry powder
    1 can light coconut milk
    1 large container vegetable stock
    3 tbsp tomato stock
    2 cloves garlic
    2 tsp fresh grated ginger
    kale, chopped
    greek yogurt (plain) for serving

Tips

soup is better the next day after it has had a chance to sit and meld


Directions

Saute onion in coconut oil until translucent. In the meantime, prep garlic and ginger and get tomato paste and curry powder measured. Once onions are translucent (5-10 minutes at medium heat), add garlic, ginger tomato paste and curry powder and stir. let cook a bit while watching until a paste forms on bottom of pan. Add vegetable stock,coconut milk and 2 cups water. then add lentils and cubed sweet potatoes. Add salt and pepper to taste. cook for 30-40 minutes.

add chopped kale and cook 5-10 minutes more. serve this with a big dollop of plain greek yogurt (2% is perfect).
