Dark Chocolate Brownies

Ingredients

    1 cup flour
    3/4 cup dutch process dark cocoa
    1/2 t. baking powder
    1/4 t. salt
    1 cup unsweetened applesauce
    1 large egg
    6 large egg whites
    2 t. vanilla
    2 c. sugar
    3 T. chopped walnuts or pecans

Directions

1. Preheat oven to 350. LIghtly spray 9x13 pan with pam. Set aside.

2. Sift together flour, cocoa, baking powder, and salt. Set aside.

3. In large mixing bowl, whisk applesauce, egg, egg whites and vanilla til thoroughly combined. Add sugar and whisk til sugar dissollved. Add dry ingredients and whisk until just moistened (20-25 seconds). Don't overmix or will be tough and rubbery.

4. Pour batter into prepared pan. Sprinkle with nuts. Bake 30-35 min or until brownies just begin to pull away from pan. Store in pan lightly covered with foil.

  • This was not good. I didn't have dark cocoa, though. Just used some Hershey's cocoa I had lying around. Was too fluffy and tasted exactly like you would expect diet brownies to taste. - 2/19/10
