baked Sweet Potato Curry

Ingredients

    2 Sweet potatoes rough chopped
    1/4 of a large Onion rough chopped
    3 cloves garlic minced
    cumin
    cinnamon
    ground cloves
    chili powder to taste
    salt if needed
    2 tsp. brown sugar
    Tamari or Soy Sauce
    2 tsp. Olive Oil

Tips

If gluten free make sure to use gluten free Tamari. This is best with a bit a yogurt stirred in when served.
I don't measure my spices normally so use caution.


Directions

rough chop sweet potato and onion. Combine all ingredients in a baking disk add enough water to cover it. Bake at 400 for 45 min -1 hour
