Orange Power Pancakes

Introduction

Delicious and healthy...tastes like french toast. There wasn't a breakfast category, so I labeled under Veggie, since it's got sweet potato and carrot in it. Truly, very tasty. Ingredients

    1 1/4 cup white flour
    3/4 cup wheat flour
    2 TB sugar
    2 tsp. baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 1/4 cup low-fat buttermilk
    3/4 cup Orange puree*
    3 egg whites
    3 TB applesauce
    1 tsp vanilla
    1/2 tsp cinnamon


    (The orange puree is 1 sweet potato and 3 carrots, boiled in unsalted water, then pureed with a small amount of water. Makes about 3 cups. Used in different foods to enhance the nutritional value. From "The Sneaky Chef".)

Directions

Mix the dry ingredients together. Mix the liquid ingredients together, separate from dry. Add liquids to dry, mix. Heat skillet and pour pancakes about 4" in diameter. Cook on medium heat til lightly brown, then flip, cook 2-3 minutes more, til golden brown. Makes about 16 pancakes.
