Turkey, White Bean, and Kale Soup

Number of Servings: 8

Ingredients

    2 lbs lean ground turkey
    2 small onions, diced
    2 c. celery
    2 tbsp. minced garlic
    1 tbsp. minced ginger or crystalized
    8 c. vegetable broth
    6 c. peeled cubed butternut squash
    6 c. chopped kale
    15 oz baby butter beans, drained
    15 oz great northern beans, drained
    15 oz black beans,drained
    2 tsp dried basil
    2 tsp dried thyme
    1 tsp ground cumin
    sea salt and pepper to taste

Directions

In large soup pot, sauté turkey, onions, celery, garlic, and ginger in 2 tbsp. of water until soft and turkey cooked through. Add broth, squash, kale, beans, and spices. Bring to a boil. Cover the pot, reduce the leat to low and simmer for 20 minutes or until veggies are tender. Season with salt & pepper.

Serving Size: Makes 8 - 2 c. servings
