Low Carb Cod

Ingredients

    6 oz. pork rines crushed to breadcrumb sized pieces
    6 tbsp. fine grated parmesan cheese
    2 tsp. olive oil
    2 tsp. Italian Seasoning
    1/4 tsp. black pepper
    1/4 tsp. garlic powder
    6 (6 ounce) Cod fillets
    3 Tbsp. mayonnaise

Directions

- Preheat oven to 450 degrees F
- in a bowl mix crushed pork rines, cheese, olive oil, Italian seasoning, garlic powder and pepper
- spray broiling rack with cooking spray and place cod on rack. Fold under thin edges.
- Brush with Mayonnaise and spoon crumb mixture on top
- Bake in a pre-heated oven for 10-12 minutes or until fish is flakey and opaque thought
