Introduction

My version of Cracker Barrel's Hash Brown Casserole... lower in fat and calories. Changes as follows:
Changed Cheddar Cheese for part skim Mozzarella.
Changed beef broth for no sodium chicken broth.
Changed whole milk for skim.
Changed margarine for unsalted real butter.

Number of Servings: 8

Ingredients

    *Potato, raw, 6 cup shredded.
    Mozzarella Cheese, part skim milk, 10 oz
    Wyler's Sodium Free Chicken Broth (1 tsp = 1 c), 1 tsp
    Water, tap, 0.5 cup
    Onions, raw, 0.25 cup, chopped
    Milk, nonfat (skim milk), 1 cup
    Land O Lakes Unsalted Sweet Butter, 1 tbsp
    Garlic, 1 tsp
    Pepper, black, 0.5 tsp

Directions

Melt butter, add milk, broth, garlic, pepper, and onion.
In skillet, heat hash browns and fold in cheese till melted.
Preheat oven to 450 degrees.
Spray baking dish with Pam.
Put hash browns into pan - pour broth mixture over ingredients.
Bake in oven about 45 minutes or until potatoes are done.

Serving Size: Makes 8 servings
