Introduction

Ingredients

    150 g sliced zucchini in strips
    150 g. sweet bell peppers, sliced in strips and cut in half
    1 ripe tomato, chunked
    150 g. sugar snap peas (5.3 oz)
    150 g. cucumber chunked
    1 cup sliced purple onion
    170 g. sliced carrots

Tips

I leave chunked large enough to dip or have bite sized pieces in a stir fry. If I plan to use in romaine boats or pita wraps, I chop that serving smaller.


Directions

I used the food processor to slice the onion and carrot. Otherwise chunk all. Put in a large covered container. shake and refrigerated until ready to use in salads, stir fries, soup, or as dippers.

Serving Size: 6 servings, 190 g each
