Homemade Cole Slaw ++

Introduction

This is a slight variation of Mom's Cole Slaw using pickle juice, light mayo and a slightly different variety of veggies. This is a slight variation of Mom's Cole Slaw using pickle juice, light mayo and a slightly different variety of veggies.
Number of Servings: 6

Ingredients

    1/2 small head cabbage, shredded
    1 med. carrot, shredded
    3 med. radishes, grated
    1/4 large zucchini, grated
    2/3 cup light mayo
    1/4 cup dill pickle juice
    any fresh herbs you like. I used dill.

Directions

combine all veggies in large salad bowl. In small bowl combine mayo, juice and herbs. Mix well.
Pour over salad and toss to coat. Chill until ready to serve.

Serving Size: makes 6 1/2 cup servings
