Broccoli Slaw Salad

Number of Servings: 20

Ingredients

    1 12 oz package broccoli slaw
    1 bunch of scallions or green onions
    1 C. sunflower seeds
    3 T. butter
    1 C. sliced/slivered almonds
    2 packages oriental ramen noodles
    1 C. canola oil (may use part olive oil)
    2/3 C. cider/balsamic vinegar
    1/2 C. sugar

Directions

Chop scallions and mix in a large bowl w/ broccoli slaw and sunflower seeds.
Melt butter on a jelly roll pan, break up ramen noodles and mix w/ almonds. Toast until golden brown.
Mix into broccoli slaw.
Mix oil, vinegar, sugar, and the seasoning packets from the ramen noodles. Pour over the broccoli slaw just before serving.
