Classic Tortilla Soup

    4 large plum tomatoes
    1 small white onion or 1" thick slice of one large
    4 garlic cloves, un-peeled
    1 medium dried New Mexico chile (or similar), stemmed, seeded and torn into large pieces.
    6 cups chicken stock, defatted
    2 corn tortillas, torn up
    Sate and freshly ground pepper

    Toppings: (not included in calorie count, add to meal planner based on your selections)

    Fried Tortilla strips (about 6 tortillas for this recipe) or tortilla chips
    2 Avacados, sliced
    6 to 8 canned chipotle chilies in adobo sause
    Mexican or regular sour cream
    1 queso fresco or mild fela cheese, crumbed.


This is a great soup and can be even heartier with chicken added.


Soup: hat a heavy saute pan over medium-high heat or prep a BBQ grill. Add tomatoes, onion and garlic and roast until garlic is soft, about 10 minutes. Remove the garlic when soft but slightly blackened. Let cool slightly and peel, set aside. Remove the onion and set aside, when tomatoes are charred and blackend, Add the chili pepper and cook for 2-4 minutes (see the care that you do not smoke, you really will burn your eyes and throat!). Add chicken stock put all ingredients back in plus the two torn up tortillas and puree with an immersion blender (or use a food processor or blender with the tops open-very important the steam can escape!) Cook for 20 minutes, till it has just a little body. Season with salt and pepper
