2 lbs dry mayocoba beans or any other dry beans you like
2 cups brown rice
12 cups water
1 lb ground deer meat or extra lean ground beef
1 lb center cut ham steak
2 medium onions
6 cloves garlic
8 medium tomatoes
6 bell peppers
4 jalapeno peppers
4 tbsp fresh cilantro
2 tbsp cumin
1 tbsp oregano
1 tsp paprika
1 tsp cayenne pepper
4 tsp salt
2 tbsp olive oil
juice of 1 lime
I used ground deer, because I was lucky to have some in the freezer. You can substitute it with extra lean ground beef. Also, you can use any kind of dry beans you like. The bell peppers were fire roasted from the last time we grilled, which added a nice smokey flavor. Also, if you toast the cumin before adding the flavor is wonderful. We added a little bit of shredded Mexican cheese to our bowls (not included in the calorie count).
Brown extra lean ground beef or ground deer meat in a skillet and add to the pot. Chop up the ham steak and add.
Add the spices and the olive oil.
Chop up the vegetables and add.
Cook until beans and rice are tender. Stir occasionally to prevent sticking. Add water if needed.
Serving Size: Makes 16 servings.
