Oatmeal Chocolate Chip Cookies - for Raisin Haters and Chocolate Lovers alike!

Introduction

Why some people refuse to eat raisins is beyond me. *rolls eyes* ;-) Same recipe as my 'Soft-Baked Oatmeal Raisin Cookies', but substituted chocolate chips for the raisins. Also made them WAY big, so I'm sure they're not even remotely healthy - so I don't want bad reviews for health... They're COOKIES for goodness sake!!! Ingredients

    1 cup butter, softened
    1 cup firmly packed brown sugar
    1/2 cup granulated sugar
    2 eggs
    1 tsp. vanilla
    1 1/2 cups flour
    1 tsp. baking soda
    1 tsp. cinnamon
    1/2 tsp. salt (optional, but included in tracker)
    3 cups dry oats, suitable for baking (like 'Quaker')
    11.5 oz / 326g bag of Ghirardelli Semi-Sweet Chocolate Chips (about 2 cups)

Directions

1. Preheat oven to 350 degrees F.
2. Beat butter, granulated sugar, and brown sugar in a large mixer bowl until creamy.
3. Add eggs and vanilla; beat well.
4. Add combined flour, baking soda, cinnamon, and salt; mix well.
5. Stir in oats and chocolate chips; mix well.
6. Drop by rounded, heaping tablespoons onto ungreased cookie sheets.
7. Bake in preheated 350 degrees F oven for 10 to 11 minutes, or until golden brown.
8. Cool 1 minute on cookie sheet; remove to wire racks to cool completely.
- Makes 2 dozen + 4 (28) generously large cookies.
- If self / portion control is exercised, these are a nice treat, and bake up soft and moist - perfect with a glass of milk or mug of tea / coffee --- but they ain't no health food! ;-)
