This is a really delicious quick and easy recipe, which is packed with flavor. It is a one dish meal, that is low in calories. I find one large lemon yields just about 1/4 cup juice. Ingredients

    1 pkg chicken breast tenders
    5 red potatoes, peeled and cubed
    3 cloves garlic, smashed
    1 bell pepper, chopped
    1/2 onion, chopped
    1 chicken bouillion cube, dissolved in
    3/4 cup water, for bouillion
    4 tbls olive oil
    1/4 cup fresh lemon juice
    1 tbls dried oregano
    salt and pepper, to taste

Directions

1. Preheat oven to 400, place chicken potatoes, and garlic in 9x13 inch galss baking pan.
2. Mix well to get everything evenly distributed in the pan .
3. Season with salt and pepper
4. Pour the chicken bouillon mixed with water over all.
5.Whisk olive oil, lemon juice, and crumbled oregano together.
6. Pour mixture over chicken and potatoes.
7. Bake for 45 mins to 1 hour, or until chicken is cooked through and potatoes are tender and golden brown, basting occasionally with pan juices.
