Morrocan Couscous

Introduction

Number of Servings: 6

Ingredients

    1 red pepper, diced
    1 medium onion, diced
    1 c Hodgson Mills Whole Wheat Couscous w/Soy and Flax
    1 can chick peas drained
    2 c chicken broth
    1 c butternut squash cubes
    1/2 tsp ground cumin
    1/4 tsp ginger
    1/4 tsp paprika
    1/4 tsp cinnamon
    dash cayenne

Directions

Place chicken broth and butternut squash cubes in saucepan and bring to boil.
Spray another large sauce pan with no stick spray and saute onions and peppers 3 minutes.
Add couscous and spices and saute 3 minutes, stirring constantly. Pour boiling chicken broth and squash over couscous, cover, remove from heat and let steep for 7 minutes. Serve warm.
Makes about 6 one-cup side dish servings.
