Mexican Chicken Stew

Introduction

Easy to make, Healthy, and Delicious! Won't leave you hungry! Easy to make, Healthy, and Delicious! Won't leave you hungry!
Number of Servings: 6

Ingredients

    2 lbs. - Chicken Breast (Frozen)
    1 can - Sweet Yellow Corn
    1 can - Kidney Beans (any variety)
    1 can - Cream of Chicken Soup
    1 can - Tomato Sauce
    1/2 cup - Onion (chopped)
    3 Tbs. - Taco Seasoning
    1-5 Tbs. - Crushed Red Pepper (based on preference)

Directions

Partially thaw chicken, cut into 1/2-1" slices. Allow to thaw. Combine all ingredients in a large pot. Mix well and heat over medium until it starts to bubble. Cover and reduce heat to low. Simmer for 30 minutes, stirring occasionally. Best if served over rice, 1.5 cups (uncooked).

    Very good. I used 2 TBSP of the pepper flakes and it was very spicy. Use less if you don't want too much heat. - 3/20/08

    Very easy and tatses good. Even with doubling the beans it turned out kind of soupy. Next time I'll add rice or quinoa right into the pot. - 3/9/08
