Strawberry Topping

Ingredients

    6 cups (thawed) frozen strawberries
    4 cups water
    1/2 cup white sugar
    1 lime, juiced
    1 tsp almond extract

    1/4 cup cornstarch
    1/4 cup cold water

Tips

The topping is good to eat now, but if you let it rest in the fridge for 12-24 hours before re-heating to serve, the flavour is better.


Directions

1. In a large pot, bring strawberries, 4 cups water and sugar to a boil. Turn down to a simmer and let simmer 5 minutes.
2. Remove a cup or two of the mix from the pot, mashed with a potato masher and return to the pot.
3. Add the juice from the lime, and the almond extract.
4. Combine the 1/4 cup cold water and cornstarch. Mix until no lumps are left.
5. Combine cornstarch water with the contents of the pot, mixing constantly.
6. Let thicken, then remove from stove.

Serving Size: Makes 40 1/4 cup servings
