IntroductionThis was kind of a wing it recipe. Served it over quinoa for some bulk and with a salad. Husband said it was a keeper. This was kind of a wing it recipe. Served it over quinoa for some bulk and with a salad. Husband said it was a keeper.
2 Chicken Breasts, cut into bite size pieces
2 large red peppers or one red and one yellow
1 large sweet Onions chopped
3 tbsp Olive Oil
3 tbsp Dale's Steak Seasoning
Daves Steak seasoning gives it a nice flavor. It's kind of like soy sauce, so a little goes a long way. I found it in the marinade section of the grocery store. But could probably substitute balsamic vinegar here - if do I would add it at the end because it burns easily.
cut peppers and onion, mix with about 1tbsp of olive oil and salt and pepper
in large saucepan, heat about 1 tbsp of olive oil. add chicken and cook (about 10-15 mins)
remove chicken and add peppers and onion. Cook until onions turn golden brown. Add oil if necessary. About 10-15 mins
Add chicken to peppers and onions. Heat if necessary.
Serve alone or over quinoa or rice. (not included in nutrition)v
