Introduction

This was kind of a wing it recipe. Served it over quinoa for some bulk and with a salad. Husband said it was a keeper. This was kind of a wing it recipe. Served it over quinoa for some bulk and with a salad. Husband said it was a keeper.

Ingredients

    2 Chicken Breasts, cut into bite size pieces
    2 large red peppers or one red and one yellow
    1 large sweet Onions chopped
    3 tbsp Olive Oil
    3 tbsp Dale's Steak Seasoning
    Salt
    Pepper

Tips

Daves Steak seasoning gives it a nice flavor. It's kind of like soy sauce, so a little goes a long way. I found it in the marinade section of the grocery store. But could probably substitute balsamic vinegar here - if do I would add it at the end because it burns easily.


Directions

cut chicken into bite size pieces. marinate with daves steak seasoning and salt and pepper

cut peppers and onion, mix with about 1tbsp of olive oil and salt and pepper

in large saucepan, heat about 1 tbsp of olive oil. add chicken and cook (about 10-15 mins)

remove chicken and add peppers and onion. Cook until onions turn golden brown. Add oil if necessary. About 10-15 mins

Add chicken to peppers and onions. Heat if necessary.

Serve alone or over quinoa or rice. (not included in nutrition)v
