Lightened Up Potato Salad

Introduction

Substitute Greek Yogurt for mayonnaise (or most of it anyway) and extend this salad with plenty of celery (green pepper too it you like!) Ingredients

    baby red potato 2 lbs
    Hellmann's , Light Mayonnaise, 1 Tbsp,
    Onions, raw, .5 cup, chopped
    Celery, raw, 2 cup, diced
    Hard Boiled Egg - chopped, 1 large
    Egg white, fresh hard boiled - chopped, 1 large
    Chobani 0% Plain Greek Yogurt (6 oz), .5 serving
    Cider Vinegar, 2 tbsp
    Dijon Mustard, Trader Joe's Whole grain 1 Tbs

Directions

Boil potatoes until tender. While potatoes are boiling mix dressing to taste - limiting mayo - add additional vinegar, mustard or yogurt to suite your desired taste & consistancy. Cool potatoes & peel. Add chopped egg/egg white, onions & celery. Add dressing, season with salt & pepper. I estimate serving size to be about 3/4 cup
