Curried Split Pea Soup

Ingredients

    Yellow Split Peas, 2 cup
    Olive Oil, 1 tbsp
    Onions, raw, 1 cup, chopped
    1 Carrots chopped
    Garlic, 4 clove
    Vegetable Broth, 4 cup
    Water, 4 cup
    1 tsp curry powder
    1 tsp ground cumin
    parsley for garnish

Directions

Heat oil in large saucepan, add onion, cook 5 minutes. Add garlic and carrot, cook until softened. Add remaining ingredients, bring to boil. Reduce heat; simmer uncovered 30 minutes, or until peas are tender.

Garnish with chopped parsley
