    1 lb Ground Beef
    1 Green Pepper
    1 Onion
    1.5 cups Brown Whole Grain Rice
    1 10 oz. can Rotel Diced Tomatoes & Chiles
    2 cups tomato juice


Brown Beef, drain
Prepare Pepper & Onion in a skillet with Canola Oil (Spray) until tender. Mix in a large bowl with uncooked rice. Add Rotel can, and 2 cups tomato juice. Put in casserole dish.
Bake in a 9 x 13 Cake Pan @ 350 degrees 30-45 minutes.
