Doug's Brooklyn Cucumber Salad

Introduction

Ingredients

    Ingredients:

    6-8 Medium sized radishes
    1 bunch fresh scallions (or 1 med. to lg. onion)
    2 medium cucumbers (‘burpless’ if desired)
    4 oz. sour cream (*low fat or fat free if desired)
    8 oz. cottage cheese (*low fat or fat free if desired)
    Salt and pepper to taste (coarse ground pepper offers a better texture)

Tips

*Low fat and fat free sour cream/cottage cheese tends to become runny after a few hours; you may want to drain off excess water before serving.


Directions

Clean and mince radishes and scallions.
Peel cucumber; cut into eighths and then 3/8-inch wedges;

In a large bowl fold vegetables into sour cream and cottage cheese. Add salt and pepper as desired.

Refrigerate and serve chilled.
Serves 4-6 side portions.
