Introduction

My friend Kevin runs an Adult Day Program and every year they plant a garden. This is one of their favorite recipes for using up the bounty of fresh tomatoes they harvest. Ingredients

    6 tbsp finely chopped fresh flat-leaf parsley, divided (Kevin says he likes to use Basil instead of Parsley)
    4 tsp grated lemon rind, divided
    1 1/2 tsp minced fresh garlic, divided
    12 oz uncooked linguine
    1 tbsp olive oil
    2 cups diced red tomatoes
    1/2 tsp freshly ground pepper
    1/4 tsp salt
    1 tbsp fresh lemon juice
    1 large yellow tomatoe, seeded and chopped* (room temperature)
    Extra virgin olive oil (optional)

Directions

COMBINE 4 tbsp parsley, 3 tsp lemon rind, and 1/2 tsp garlic in a small bowl; set aside.
COOK pasta according to package directions in a large pot; drain. Return pasta to pot, and set aside.
SAUTE remaining 1 tsp garlic in hot oil in a large nonstick skillet over medium-high heat 1 minute or until lightly browned. Stir in petite diced tomatoes, pepper, and salt. Brig to a boil; reduce heat to medium and simmer, stirring occasionally. 10 minutes or until slightly thickened. Stir in remaining 2 tbsp parsley, remaining 1 tsp lemon rind, and lemon juice.
POUR tomato sauce over hot cooked pasta and toss to combine. Top each serving evenly with chopped yellow tomatoes and parsley mixture. Drizzle each serving evenly with olive oil, if desired.
*3/4 c yellow grape or cherry tomatoes, halved, or 1 red tomato, seeded and chopped, may be substituted.
