Number of Servings: 20

Ingredients

1 large can whole kernel corn, drained
1 large (15 oz) can black beans, drained
1 jar Newmans Pineapple Salsa (16 oz)
5 boneless, skinless chicken breasts (approx 3.3 lbs total)
(remove tendons and cut each breast in half)
    When chicken is cooked, add:
1 (8 oz) 1/3 light cream cheese or fat free (adjust calories)

Tips

Most recipes call for 4 chicken breasts but I use 5 to reduce calories/per serving and serve 1/4 of breast for one small serving or 1/2 breast for large serving

Directions

Spray crockpot with Pam, layer pieces of chicken in pot, then pour in drained corn and beans and top with salsa. Set on high and cook for approx 5 to 6 hours or 8 hours on low. When chicken is fork tender, add cream cheese in chunks and close lid for approx 30 mins. Cut chicken pieces in half to serve approx 2.6 oz of chicken with a couple tablespoons of sauce for one small serving or double for large serving. Also great with blue corn chips (add calories for this)

Serving Size: Makes 20 3-oz servings (1 serving) or 10 6-oz servings (2 servings)
