Number of Servings: 6

Ingredients

    2 tbsp Extra Virgin Olive Oil
    1 medium Onion
    3 cloves Garlic
    8 oz. container Mushrooms
    4 oz Red Wine
    10 Roma Tomatoes
    12 leaves Basil
    salt and pepper to taste

Tips

Shown here served over penne with a dollop of low-fat ricotta. I always add 1 cup of the pasta water to the sauce before draining and adding my pasta :)

Directions

Cut onions to desired size (I like mine in strips). Chop garlic. Pour olive oil into sauce pot over medium heat. Add onions and garlic and stir occasionally. While onions are caramelizing, cut mushrooms into fours. Add mushrooms to pot and cook 2 minutes, stirring occasionally. Deglaze pot with red wine and stir. Cut tomatoes in fours and add to pot. Add basil leaves. Cover and simmer on med-low for 2 hours, stirring occasionally.

Serving Size: Makes roughly 6 servings
