Banana-Berry Walnut Bread (Steve's Favorite)

Introduction

Number of Servings: 16

Ingredients

    1-1/2 C all-purpose flour
    1 tsp ground cinnamon
    1/2 tsp baking soda
    1/2 tsp salt
    1/4 tsp ground nutmeg
    2 eggs, large
    1 C sugar
    1/4 C vegetable oil
    3/4 C mashed fresh strawberries
    1/2 C mashed ripe banana (one large)
    1/2 C chopped walnuts

Directions

Preheat oven to 350*f.
In a bowl, combine the first five ingredients.

In a large bowl, beat the eggs, sugar and oil until smooth; add the strawberries and banana.

Stir in the dry ingredients until just moistened. Fold in the walnuts.

Pour into a greased 9"x5"x3" loaf pan.

Bake at 350*f for 60-65 minutes, or until toothpick inserted near the center comes out clean.

Cool 10 minutes in pan, before removing to wire rack to cool. (may be served warm)

Ziplock/wrap any leftovers and refrigerate for up to 3 days. Re-warms in microwave or toaster oven, nicely.

yield: 1 loaf (16 slices)
