Shelly's Faux "Fried" Zucchini with High Protein Parmesan Dip

NOTE: I changed just a bit - used crushed almonds and onion flakes instead of "crunchy onions" for lower carb option - also added gomasio in the dip for a nice flavor.

Ingredients

    Zucchini, 3 cup, sliced
    Kroger Break Free Real Egg, 0.25 cup
    Eagle Mills White Whole Wheat Flour, 0.25 cup
    onion flakes, 3 tbsp.
    Almonds, 0.25 cup, ground
    Parmesan Cheese, grated, 2 tbsp
    Mrs. Dash (R) Garlic & Herb Seasoning Blend, 0.25 tsp
    Pepper, black, 1 dash

    Dip:
    Cottage Cheese, 2% Milkfat, 0.5 cup (not packed)
    Activia Greek Yogurt, 1 serving
    Parmesan Cheese, grated, 2 tbsp
    Oregano, ground, 0.25 tsp
    Pepper, black, 1 dash
    *Gomasio, Eden Organic, Seaweed, 1 tsp

Directions

Spray a non stick baking sheet with Pam cooking spray. Slice zucchini. In a small bowl beat egg - set aside.
In another bowl, crush flour, almonds, and onion flakes, parmesan and seasonings mix together in a shallow dish.
Dredge zucchini in egg, then in coating, coating both sides.
Place on prepared baking sheet.
Bake at 450 for 10 minutes, flip them, then cook 10 minutes more.
Serve with Parmesan Dip.
