Easy Pad Thai

Introduction

Really yummy; I love all the flavors that come together in this dish, cilantro, lime, soy sauce, etc. Easy to customize as well. Comes out fairly mild - You can add additional sriracha sauce, cilantro, lime, peanuts, to your liking

Number of Servings: 6

Ingredients

    -8 oz. dried, wide and flat Rice Noodles (I use 1/2 of a 14oz box of Thai Kitchen's Stir Fry Rice Noodles)
    -4 TBSP Brown Sugar
    -4 TBSP Lime Juice, plus wedges for serving
    -1/4 c. plus 2 TBSP Soy Sauce
    -1 squirt (approx 1/4 tsp) Sriracha / Optional
    -2 tsp. Vegetable or Coconut Oil
    -3 Scallions (green onions), white and green parts separated, and thinly sliced
    -1 clove garlic, minced
    -2 Large Eggs, lightly beaten (optional)
    -1 pound chicken breast, cubed (optional)
    -1/2 c. fresh cilantro
    -1/2 c. chopped roasted salted peanuts

Directions

1. Cook noodles according to box, drain, and set aside.
2. In a small bowl, combine lime juice, soy sauce, brown sugar, and sriracha.
3. Add 1 TBSP oil to a large skillet or wok, and add the cubed chicken. When the chicken has stared to cook, add 3-4 TBSP of the sauce mixture, and cook down. Once cooked, remove from heat and set aside.
4. Add scallion whites and garlic to the skillet, and cook, stirring constantly until fragrant (approx. 30 sec).
5. Add eggs, and cook, scraping skillet with spatula until eggs are almost set (approx. 30 sec). Move eggs to plate.
6. Add the cooked noodles, scallion greens, chicken, and sauce to skillet until noodles are soft and everything is incorporated well. Add egg mixture and toss to coat, breaking eggs up gently.
7. Serve noodles with lime wedges, topped with cilantro and chopped peanuts.


Serving Size: Makes approximately 6 servings.
