Zesty Pineapple Veggie Chicken & Shrimp

Introduction

Ingredients

    4 Quorn Chik'n Cutlets
    12 oz Shrimp, cooked
    4 servings Small Red Potatoes (4 potatoes - 148g / 5.3 oz serving), quartered
    1 cup Zucchini, sliced
    .5 cup Red Onion Raw
    1 cup pineapple tidbits in pineapple juice (reserve juice)
    .5 cup Hunt's Tomato Sauce Basil, Garlic, & Oregano
    4 tbsp Basil
    Cajun seasoning blend, to taste
    Mrs. Dash Garlic & Herb, to taste
    Pepper, to taste

Tips

Alternate: Grill potatoes and zucchini on grill, or press grill. Grill Quorn Chick'n on grill also.


Directions

Preheat oven to 400*

Cut small red potatoes into fourths. Combine potatoes and zucchini in roasting pan and spray with PAM or olive oil (not included in nutrition data). Cook for 50 minutes.

Sprinkle Mrs. Dash Garlic & Hearb on Quorn Chick'n and heat as per package.

Sautee shrimp with pineapple juice and a small amount of Cajun seasoning. Add tomato sauce and more cajun seasoning to taste. Just until hot, do not over cook

Put 1/4 of potatoes and zucchini on plate. Place Chick'n on top. Pour 1/4 of shrimp and cajun seasoned tomato sauce on top along with onion and pineapple over all items. Sprinkle chopped fresh basil over top.

Serving Size: Makes 4 individual servings.
