Chicken Grape & Apple Salad

Introduction

This is my go-to recipe when I've got leftover chicken. This is my go-to recipe when I've got leftover chicken.
Number of Servings: 4

Ingredients

    1 lb. boneless skinless chicken breast, cooked & cubed
    1 1/2 lbs. red seedless grapes, halved
    1 cup cubed unpeeled apple
    2/3 cup sliced celery
    1/4 cup raisins or crasins
    2 tbsps. finely chopped red onion
    1/3 cup plain nonfat yogurt
    2 tbsps. lowfat mayonnaise
    1 1/2 tbsps. lemon juice
    1 tbsp. minced fresh celery leaves
    1/4 tsp salt
    1/2 tsp Mrs Dash "Caribbean Citrus" seasoning (optional)
    2 heads Romaine lettuce, chopped

    Combine first 6 ingredients in bowl. Toss gently. Combine next 5-6 ingredients in small bowl; stir well. Add to chicken mixture; toss gently to coat. Cover & chill for at least 1 hour. Serve over chopped lettuce. Serves 4.
