Ingredients

    1 pound stewing beef
    1/4 to 1 cup chopped onion
    1 tbsp olive oil
    1 cup fresh snap peas
    1 cup fresh green beans
    2 cups diced potatoes
    1 cup tomatoe puree or fresh tomatoes
    3 cups low fat/sodium beef stock
    5 cups water
    2 cups chopped cabbage
    1 cup chopped carrots

Directions

Cut up 1 pound stew beef. Brown in 1tbsp olive oil. Add 1 cup fresh snow peas, 1 cup chopped carrots, 2 cups chopped cabbage, 1 cup fresh green beans, 1/2 cup chopped onions, 2 cups diced potatoes, 3 cups low fat/sodium beef broth, 5 cups water, 1 cup tomatoes or tomatoe puree. Cook for 45 mins. to an hour. Makes 6 1 1/2 cup servings.
