Marinated Beets

Number of Servings: 4

Ingredients

    2 medium sized Fresh beets (approx. 4 " dia)
    Vinegar
    3 Sugar packets
    salt
    pepper

Directions

1. Peel, chop and boil beets until tender.
2. Sprinkle sugar on beets when still warm
3. Transfer to bowl and add vinegar to marinate the beets.
4. Let cool a bit and season with salt and pepper
5. Refrigerate and enjoy.

You can tweak the seasoning amount based on your taste. . a bit more sugar or more salt and pepper etc. . .
