Oh My Jambalaya

Introduction

Number of Servings: 8

Ingredients

    Butter
    Diced Onion
    Chopped Red Pepper (seeded whole)
    Chopped Green Pepper (seeded whole)
    Chopped Yellow Pepper (seeded whole)
    Minced Garlic cloves (5 cloves about 3 tsp)

    Cubed up chicken breast
    sliced up turkey sausage (smoked)

    3c white rice
    2c chicken broth
    red kidney beans
    3Tbs ground cayanne pepper

Tips

For my girls I add some plain greek yogurt and a little cheese to cut back on the heat of the dish. For my husband and I, I sprinkle a bit of extra cayanne pepper on each dish.


Directions

Saute butter, onion, peppers, and garlic until garlic begins to pop and it smells divine. Add chicken breast and continue to saute until all chicken is cooked just on the outside. Add turkey sausage, mix everything then put on lid and pressure cook for 8 minutes. Release steam, add rice, chicken broth, beans and cayanne pepper and mix thoroughly. Pressure cook for 5 more minutes. Release steam, dish out and enjoy!
