Introduction

like stroganoff but better like stroganoff but better
Number of Servings: 3

Ingredients

    * Tofu, extra firm, 14oz
    * Mushrooms, fresh, 3 cup, whole (8oz)
    * Garlic, 2 large or 3 small cloves
    * Onions, raw, 1 cup, chopped
    * Oikos Organic Greek Yogurt, Plain, 8 oz
    * Salt, 3 dash
    * Pepper, black, 3 dash
    * Lemon Juice, 1 lemon yields
    * Olive Oil, 1 tbsp
    * Dill weed (optional, not included in nutrition info)

Directions

1) dice tofu and pat dry on paper towels or cheese cloth
2) heat oil in a big deep skillet, add tofu with a pinch of salt and pepper and cook until golden
(note: this step is actually optional, if you want to cut down on the fat and time, you can just spray a non-stick skillet and add veggies at the same time as the tofu... but the flavors won't be as complex)
3) add onions, mushrooms, and garlic with a pinch of salt and pepper, stir, cover, and let them cook down a bit
4) mix yogurt with lemon juice and a dash of salt and pepper (add dill here if desired)
5) when veggies are very soft take the pan off heat and stir in the yogurt mixture

Serves 3 - great over whole-wheat noodles
