Artichoke Orzo

Number of Servings: 4

Ingredients

    1/2 cup onion
    4 tsp EVOO
    2/3 cup Orzo Pasta
    2tsp minced garlic
    2 cups chopped Kale
    4 cups vegetable broth
    1/2 parmesan cheese
    1 11oz can of artichoke hearts


Directions

Saute Onion in the EVOO. Add orzo and stir continuously until the Orzo starts to brown. Add Kale and stir for 1 minute. Add 1/2 cup of the broth and stir until liquid is absorbed. Add 1/4 of broth at a time stirring until the liquid is absorbed. Should take about 15 minutes. Add cheese and stir until melted. Add artichoke hearts and stir until heated through.
