Vegetti Spaghetti Sauce

Introduction

This sauce is delicious. So far, I have enjoyed it with Lundberg mixed grains, and spaghetti squash. I think it would be good as a salad dressing with some vinegar added to it. Or blend a serving with vegetable stock and serve as a smooth vegetable/tomato soup, cold or hot. This sauce is delicious. So far, I have enjoyed it with Lundberg mixed grains, and spaghetti squash. Ingredients

    Onions, raw, 1.5 cup, chopped
    Mushrooms, fresh, 4 cup, pieces or slices
    Kale, 3 cup, chopped
    Celery, raw, 1 cup, diced
    *Kitchen Basics Unsalted Vegetable Stock, 1 cup as needed

    Garlic, peeled, 3 cloves
    Del Monte Diced Tomatoes, No Salt Added, 4.5 cup
    Cinnamon, ground, .5 tsp
    Cocoa, dry powder, unsweetened, 3 tbsp

    *mini pepper, 3 serving, about 9 mini tri-color peppers, sliced into wheels. (240 g)

Tips

***After water sauteeing, you can put all ingredients (including peppers) in a crock pot and cook on low 4 - 8 hours.


Directions

Process onions, mushrooms, kale, and celery until chopped fine in a food processor. Place in saute pan with 1/4 c. vegetable stock.
"Stock" saute onions, mushrooms, kale, and celery over medium heat, adding more stock to liquid saute as needed. About 10 minutes.

Pour the juice from 3 cans of DelMonte Diced Tomatoes, No Salt Added through a strainer, into the saute pan. Allow the juice to cook down with the pan uncovered, stirring occasionally.

Pulse the tomato pieces with the peeled garlic until it is a sauce. Pour over sauteed veggies and add seasoning. Add other seasoning to taste. (you might like to add McCormick no salt Garlic and Herb. I don't seem to like basil with the cocoa powder.
Cover and Simmer 60 minutes.***

Slice the mini tri-color peppers into 1/4 inch wheels. Add to Vegetti Sauce and simmer another hour.

Serve

Serving Size: Makes 3 generous servings of sauce.
