1 1/2 cups boiling water
1/2 cup bulgur
2 medium tomatoes, chopped
1 medium cucumber, seeded and chopped
1 cup flat leaf (Italian) parsley, finely chopped
1/4 cup fresh mint or 1 Tablespoon dried mint
1/3 cup lemon juice
1/4 cup extra virgin olive oil
3/4 tsp. kosher salt
1/2 tsp. freshly ground black pepper
Put bulgur back in bowl and stir in tomatoes, cucumber, parsley and mint.
In a jar combine lemon juice, oil, salt and pepper. Shake well then pour over bulgur mixture. Toss to mix and coat. Cover bulgur and chill for several hours or preferably overnight.
Makes six 2/3 cup servings.
